To help soften the blow, Olympic Cellars has partnered again with WeDo Fudge to create a sumptuous Fudge and Port February Special. Greg has gently, hand-bottled our Sailing Moon Red in full-sized wine bottles (750 ml).
The wine is a blend of four Portuguese grape varietals – Tempranillo, Tinta Cao, Touriga and Tinta Madeira; co-fermented and fortified with Brandy. This Port-style wine is 20% alcohol. The voluptuous mouthfeel and heady aromas of ripe, dark fruit will lure you in while deep, rich concentrated bing cherry will finish you off. Never cloying or simple always complex and sensuous.
Christina from WeDo Fudge delivered two types of freshly made fudge: dark chocolate with a hint of orange and dark chocolate with caramel and sea salt. Both are delicious with the Port and best of all, you get to choose which flavor you want with your Port. The cost for a bottle of Port and your choice of fudge is $40.00. If you would like to purchase extra fudge and create your own pairing, each piece is $7.00.
The Sailing Moon Red is typically sold in a 375 ml bottle for $26.99. Take advantage of this special and receive twice as much Sailing Moon plus a 4.2 oz piece of Fudge for $40.00. That is over a $20.00 savings! Order on-line for shipping here: https://olympiccellars.com/shop-wines/

To help make the new year extra joyous and bright we are offering a 30% off discount on our delicious Zinfandel! Through the month of January, our Zinfandel will be priced at only $24.49.
Zinfandel, 2015 (tasting notes) Brick red with an orange rim, this wine shows extensive barrel age. Aromas include spicy red fruit, tobacco, sour cherry, pie cherry, red currant, and blackberry. This wine is very complex with a long, graceful, and smooth finish. Best 2021 – 2024.
If you could put 2020 in a bottle what would that brew be?
The COVID-19 pandemic challenges wrought upon 2020 were given a smoke-filled exclamation point when most of the fall harvest was covered in a thick blanket of wildfire smoke throughout the entire West.
Extensive (and expensive) testing could determine if the smoke had already tainted the grapes or not. But by then we had already realized that few would be lifting a toast to a future special occasion and selecting the 2020 vintage as an “exceptionally fine year.”
So, with plenty of previous years of wine still aging well in their barrels, we decided to pass on the 2020 harvest.
Instead, we’re opening the “library” to bring you many familiar, along with some rediscovered old favorites. Supply may be limited, but – unlike 2020 – we can guarantee that these vintages and bottled blends are from years full of much fonder memories than what we’ve all just survived.
Riesling has always been a great wine to enjoy if you are looking for something refreshing to sip, and keep down the alcohol intake.
This pale golden wine, is a taste basket full of honey and green candy aromas, cotton candy, melon. Sweet and tart in the mouth with flavors of green apple, pears, and peaches. Making a fresh and light toast for the early evening.
Another great light wine, this time for red wine drinkers.
Rose’ The Riveter, 2018 is solidly rooted in as delicious Lemberger varietal. Dark pink in color. Fresh tasting, flavorful and fruity. This slightly sweet wine tastes of fresh strawberries and is the perfect choice for an early evening sipping wine on New Year’s Eve.
This one does not disappoint, thanks to all of the classic Lemberger character.
And for when the Ball Drops in the Big Apple – Raise a toast and offer the new years first kiss over a glass of My Sweet Syrah – A Sweeter Style Red, this is our signature blend of Syrah and Late Harvest Riesling.
This wine is a bit lighter than a varietal Syrah, lush and semi-sweet (3.5% residual sugar). Bright fruit sumptuous and smooth. A beautiful dessert wine or just for sipping. And it’s dangerous with dark chocolate. “The sweetness of the wine lingers on your lips like a first kiss”.
The Best Wines to Give as New Year Gifts
For some people, it can be difficult to spend time with all of their friends and family on New Year’s Eve.
And for those people we have to miss on this night, it can be nice to send them a New Year’s gift so that they know they were on your mind.
Some say stuffing, others do dressing. It can be cornbread or white bread, scented with sage, stuffed with sausage or dressed with oysters. Whatever recipe you favor, match the strongest flavor in the dish with the wine.
For instance, with oyster dressing, go with something citrusy. Working Girl White is bright with acidity, and classic citrus flavors. It also has an herbaceous quality, making it a perfect partner with vegetables like Brussel sprouts or green beans.
Whether it’s deep-fried, roasted, barbequed or smoked, turkey wine is a slam dunk. Whether a dry red, rosé or white, many wines shine with turkey. An elegant Pinot Noir or Dungeness Rosé works well with turkey, especially if there is a mushroom gravy.
Cranberry is probably the tangiest and toughest flavor to match. But our seasonal Cranberry Jubilee or the fruity and hints of fresh strawberries found in our Rosé The Riveter both pair perfectly with the tart-sweet flavors of cranberries. Each of these wines are so full of fruit that both are a good match with turkey too!
Try this hearty, fall soup recipe, and wine pairing.
Shrimp Posole’ Soup
1 Medium Onion
1 Red Bell Pepper
1 Green Bell Pepper
1 Jalapeño Pepper
1 Can (7 ¾ oz) El Pato Brand Hot Tomato Sauce
1 Quart Stock – your choice (I usually use chicken, because I tend to have it in my pantry, but you could use seafood or vegetable)
1 Teaspoon Dried Oregano
I Can (30 oz) Hominy – Drained and Rinsed
1 Pound Fresh or Frozen Shrimp (Raw, Peeled & De-veined)
½ Cup Orange Juice
Garnishes: Lime Wedges, Cilantro, Avocado, Green onion
Peel and chop the Onion. Remove the seeds and ribs from the Peppers and chop. In a soup pot, sauté the Onion and Peppers in a little oil over medium heat until softened. To the soup pot, add the El Pato, Stock, Oregano, and Hominy. Cook until the hominy softens and puffs up a little, about 20 minutes. Add the Shrimp and cook until pink. Remove from heat and add the Orange Juice. Serve with Lime Wedges, Chopped Cilantro, Cubed Avocado, and Chopped Green Onions.
Enjoy with Dungeness White Riesling. The fruitiness of the Riesling and the bright acidity tame the spiciness of this soup. Riesling and shrimp are always a good choice!
